Chickpea and Spinach Curry

Whether as a side dish or as a main course, this rich curry is a perfect match for a steaming bowl of rice.

Chickpea and Spinach Curry

Ingredients

□  1 tbsp of vegetable oil
□  1 clove of garlic, crushed
□  ½ small head of red onion, sliced
□  10 cherry tomatoes, halved
□  2 tsp of curry powder
□  ½ tsp of salt
□  ½ tsp of black pepper
□  2 tbsp of Curtice Brothers Organic Ketchup
□  50 ml water
□  1 tsp of honey
□  1 tsp of chili flakes
□  100g of chickpeas from a can
□  A handful of fresh spinach

Instructions

1. In a hot pan, add vegetable oil, stir fry garlic and onion for 2 minutes
2. Add in tomatoes, ketchup, water, curry powder, honey, chili flakes salt and black pepper
3. Lower the heat for 2 minutes and add in the chickpeas
4. Stir regularly, and after another 2 minutes - add in the spinach
5. Cook until the spinach has wilted and serve
