Hearty Stew

Stew is always a comfort food that comes to mind as the months get colder. Tender meat, fall vegetables and a soup that you just want to mop clean with warm bread. Nobody says no to stew!

Hearty Stew

Ingredients

□  2 tbsp of vegetable oil
□  1 clove of garlic, diced
□  ¼ red onion, diced
□  250g of pork, chopped
□  1 carrot, peeled and chopped
□  150g of potatoes, chopped
□  100g of mushrooms, sliced
□  1 spring fresh rosemary
□  1 tsp of salt
□  1 tsp of black pepper
□  100 ml of red wine
□  50g of frozen peas
□  60g of Curtice Brothers Organic Ketchup
□  400g of chopped tomatoes
□  1L of vegetable stock
□  1 tbsp of flour, dissolved in 100 ml of water

Instructions

1. In a soup pot, start by frying the onions and garlic for about 1 minute
2. Add in the pork and brown it on all sides
3. Stir in the carrots and potatoes for 2 minutes
4. Add the mushrooms and season with salt, black pepper and rosemary
5. Cook for about 5 minutes, stirring regularly and then add in the wine for another 2 – 3 minutes
6. Add in ketchup and stir nicely for a minute, followed by tinned tomatoes and stock
7. Lower the heat and cover
8. Simmer for about an hour
9. Now add in the dissolved flour in water and let it simmer for another 10 minutes, this will thicken the stew
