Red Capsicum Pesto

Red Capsicum Pesto made from scratch is so simple, and yet so fresh. It is a flavour that you can hardly find in stores. This pesto can be served with warm toasted bread as an appetizer, or with chips as a snack. You can even use it as a sauce for a wrap. It is a highly versatile dip and a recipe to keep in your pocket!

Red Capsicum Pesto

Ingredients

Pesto:
□  2 roasted peppers, peeled and deseeded
□  1 tbsp of olive oil
□  Some fresh basil leaves
□  2 tbsp of Curtice Brothers Organic Ketchup
□  ½ tsp of salt
□  ½ tsp of black pepper
□  10g of pistachios

Instructions

1. Add all the ingredients into a blender and blitz until desired consistency
2. Serve with warm toasted bread
