Shashuka

These baked eggs are easy to make, yet taste as though you were travelling to its origin. It’s absolutely a brunch favourite.

Shashuka

Ingredients

□  1 tbsp of vegetable oil
□  1 clove of garlic
□  ¼ small red onion, chopped
□  1 small carrot, chopped
□  1 small red pepper, chopped
□  1 tbsp of Curtice Brothers Organic Ketchup
□  200g of chopped tomatoes
□  1 tsp of honey
□  ½ tsp of salt
□  ½ tsp of black pepper
□  ½ tsp of dried oregano
□  2 eggs

Serve with:
□  Spring onions

Instructions

1. In a hot pan, add vegetable oil, and start by frying the garlic, onions, peppers and carrots for 5 minutes
2. Add in ketchup and let it cook for a minute
3. Add in chopped tomatoes and season with honey, salt, black pepper and oregano
4. Simmer for about 10 minutes on a low heat
5. Transfer into a baking pan, and break the eggs on top
6. Bake in the oven, set to 200 degrees, for about 15 minutes
7. Serve with spring onions
